1 small onion, diced g
8 ounces mushrooms, sliced g
8 mini bell peppers g
1 teaspoon salt g
1/2 teaspoon smoked paprika g

1/2 teaspoon ground black pepper g
1 (15 1/2 ounce) can chickpeas, drained g
1/3 cup spinach leaves g

Instructions

Heat oil in a large skillet over medium-high heat. Add potatoes, onion, and mushrooms. Cook, stirring, for 10 minutes.

Add mini bell peppers, salt, paprika, parsley, and pepper. Cook for 10 minutes more.
