2 (29 ounce) cans sweet potatoes g
2 tablespoons butter g
1 tablespoon lemon juice g
½ (16 ounce) package gingersnap cookies g
1 (16 ounce) package miniature marshmallows, or as needed g

Instructions

Mix sweet potatoes, butter, and lemon juice together in a large saucepan over medium heat. Break gingersnap cookies into mixture. Cook, stirring occasionally, until thick, about 15 minutes.

Spread desired quantity of marshmallows over sweet potato mixture. Remove from heat and cover with a lid until marshmallows have melted, about 5 minutes. Serve warm.
